Kirsch, the most celebrated of our Alsace eaux-de-vie, is made from small, black cherries with large stones. Powerful, full-bodied aromas are achieved by double distilling the fruit. A long rest in cellars gives this eau-de-vie its full roundness and bouquet so curiously pervading, witnessing its trueness to tradition.
