100% biodynamically Aligoté (doré) from a parcel planted above Les Monts de Fussey and below Mainbey in the Hautes Cotes de Beaune. Grapes are hand-harvested, crushed and very slowly pressed over 6 hours into 228L & 600L neutral barrels for spontaneous fermentation with pied de cuve and élevage thereafter for 12 months prior to bottling unfined, coarsely filtered, minimal added SO2. 12% ABV
