Chateau Mauvin Sauternes 2018
It is on the left bank of the Garonne and to the south of its famous tributary, the Céron, that the prestigious appellation d'origine contrôlée of Sauternes is located. Here, the climatic conditions are combined to produce a sweet white wine of exceptional quality, without equal. The morning mist that rises every summer morning to attack the vineyards to dissipate in the afternoon heat allows the growth of botrytis cinerea, noble rot, on very ripe grapes: a fungus which, when controlled, allows the concentration of sugars, acids and aromas in the very heart of the grape berries, while providing their aromatic signature. Retaining a large part of the residual sugars, the wines of Sauternes are syrupy but very well balanced by the great acidity brought by the type of vines used, Sémillon, Sauvignon Blanc and Muscadelle. Great wines for laying down, Sauternes can be kept for several decades in the cellar: the best vintages from the beginning of the last century still have a lot to tell us
