This is top Savennieres! It is young, but opens up nicely with floral notes, stone fruits, beeswax and stone. The taste is razor sharp, in great balance and with enormous mineral length.
Our latest scoop in the Loire. Tessa Laroche from the woman behind Domaine Aux Moines, which is now certified organic, but in practice the cultivation is biodynamic. They own 12 hectares, all in the microscopic appellation Savennieres Roche aux Moines, whose soil has a high content of green/small slate, sandstone and rhyolite. The vinification is completely old school, everything is harvested by hand and only the healthiest grapes reach the winery. Fermentation takes place spontaneously in steel tanks, the wines are aged for 12 months on the yeast residues in used French oak barrels, and in the bottle for 6 months before release.
Serve at 10-12 degrees in large Burgundy glasses. Decant for 1 hour, this wine benefits from air. It is a food-friendly wine that can handle all seafood, fatty fish and white meats such as chicken and pork.
