Starting with the transparent, drinkable and aromatically intense red Côtes du Juras with a low alcohol level, through the non-oxidative Chardonnay wines of the Côtes du Jura to the Vins Jaunes and 1er Grand Crus from Château Chalon, each of these wines is fascinating with its completely unique profile, firm center, crystalline minerality, clear aromas, high transparency (the reds) and salty expression in the finish (the whites). As they age, they all gain in stature, they become large. A 1937 Château Chalon shows itself in brilliant gold, fanning out a wheel of aromas from roasted grain to slightly creamy yellow fruit to honey of such impressive intensity that it takes our breath away: what elegance, what finely spun acidity, what honey-fine texture!
