Domaine Jean Michel Giboulot Savigny Les Beaune Aux Fournaux 1er Cru 2021
Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel Giboulot has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). The vines are organically grown. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
Deep cherry colour, purple with garnet reflections. A bouquet focused on small black and red fruits (blackcurrant, cherry, raspberry), as well as on flowers (violet). The body is discreetly tannic, rich. It preserves its fruit. Roundness and volume, balance and power in the right proportions often evoke sour cherries with beautiful elegance.
