This is a wine with great personality, made from Valpolicella Classica grapes , selecting only the "recie," the wings of the bunch, the sweetest and loosest part. Vinification takes place in two stages starting in late January, after the grapes have dried in traditional drying rooms. It is then left to age in the bottle for a few months to reach the peak of its qualities while still young.
