Summary: Fontavera wines are crafted by winemaker Andrea Sartori, the great-grandson of the founder of the still family owned Sartori di Verona Winery in 1898; now considered one the most important wineries of the North-East.
Andrea has strongly voiced his concerns of the impact of climate change and advocated the need to support the future of organic viticulture combined with higher altitude plantings. The wines of Fontavera are a direct result of his ambition, seeking out older, organically farmed vineyards grown on higher, cooler sites.
Winemaking: All hand-picked and hand-sorted before whole bunch pressing to 100% stainless steel for fermentation. After an uneventful ferment to dryness the wine spent a short period on lees to build mouth-feel and flavour complexity before being bottled.
Tasting Note: The 2021 Pinot Grigio is an aromatic wine displaying lemons, fresh pear and wet stone. Spending a short time on lees has softened the wine and delivered a layered, textural mouthfeel whilst maintaining the racy acidity we expect of the region. Best consumed in its youth, this wine will partner well with fresh seafood, goats cheese dishes and antipasto.
