Winemaking

The fruit, from our Billi’s Vineyard, Block G, was harvested using a selective processor on 19 April 2021. After gentle crushing, the juice was fermented for 1 week in stainless steel, sweeping arm fermenters and kept on skins for an additional week to the wine's texture and mouthfeel. The wine was predominantly matured in older French oak 500L puncheons for two years.
