This wine is made from 100% Merlot grapes from the Hollick Coonawarra vineyard. Made by Hollick since 1992, it continues its reputation as a wine for every celebratory occasion.

The 2021 vintage in Coonawarra was high cropping of great quality fruit. Vibrant colour in red wines are a stand out for this vintage.

The fruit for the 2021 Sparkling Merlot was carefully selected ensuring quality. Primary fermentation was conducted onsite in stainless steel. Secondary fermentation was completed in stainless steel pressure vessel and then bottled. This has produced a fine persistent bead, lifting the palate of bright red fruits.
