A linear, cool climate Chardonnay with a flavour profile towards citrus.

Crushed and pressed with 1/5 fermented in new French Puncheon, 4/5 in stainless tank. Fermented on solids and allowed to sit on gross lees for 8 months before racking and bottling without fining or filtration.
