Colour: Pale lemon-green

Aroma: Delicate floral notes of Jasmine and citrus blossom bath salts lime and fresh cut pear. Savoury undertones of bay leaf and green olive.

Palate: The palate delivers great fruit concentration and texture supported by mouthwatering racy acidity. An abundance of citrus fruit flavours and a salty briny finish.

Grapes: 100% Riesling

Winemaking: Riesling grapes were picked at optimal ripeness in early April from Block 9 of the Josef Chromy Relbia Vineyard.

The grapes were gently pressed under CO2 cover to help preserve delicate aroma compounds. The free run juice was highly clarified to further support the pristine aromatic profile of the finished wine.

A cool fermentation took place thereafter in a stainless steel tank lasting about two weeks and monitored daily. Upon completion the wine was left to settle before being racked off its gross lees and allowed to further develop for several months before bottling.
