Domaine des Quatre Piliers is located in Noyers-sur-Cher in the Loire Valley . It belongs to Valentin Desloges , the son of a winemaker from Touraine. He trained at renowned estates: Vincent Sipp in Alsace, Château Mangot in Saint-Émilion, Thierry and Paul Pillot in Chassagne-Montrachet, and Raphaël Coche at Coche-Dury in Meursault. His 10-hectare vineyard is divided into 25 plots, cultivated like small gardens and converted to organic farming . Passionate about the impact of barrels and trained in various wine regions in complementary aging practices, Valentin Desloges dries the oak for staves for several years before overseeing the process of crafting his custom-made barrels. This is part of a virtuous production cycle, perfectly aligned with the eco-responsible approach of Domaine des Quatre Piliers.

The grapes are harvested by hand to preserve their quality and handle them gently. The wines ferment with indigenous yeasts. Alcoholic fermentation takes place in stainless steel tanks , followed by malolactic fermentation in barrels that have held two or five wines previously , sourced from classified Bordeaux Grand Cru vineyards for the Cabernet Franc and Côt, and from Burgundy for the Pinot Noir. The white wines ferment exclusively in oak, with varying proportions of new oak depending on the cuvée: 10% for Chapitre I (a blend of barrels, demi-muids, and 350-liter casks), 20% in Burgundy barrels for the flagship Sauvignon Blanc, and 30% for the Chenin Blanc.
