‘Three parcels of uniquely different Chardonnay fruit were selected to blend this exceptional wine. Hand-picked and whole bunch pressed to seasoned French oak, the resulting juice was left to undergo natural alcoholic fermentation with a small component undergoing natural MLF concurrently. Post fermentation, the wines were over-wintered without the addition of SO2 until spring.

Subsequent blending into stainless steel, where the wine remained on gross lees for a further 6 months to enhance texture and aromatic detail, prior to bottling with minimal intervention.

Beguiling nose of fresh sea spray and flint, framed by zesty grapefruit pith and minerality. A seductive oyster shell and satiating citrus core is framed by subtle oak spice and almond meal. A wine with intensity and purity. – Liam McElhinney
