Old Kempton Six Shillings Gin (50ml)

Six Shillings references the sum that William Ellis, the once-convict and founder of Dysart house, admitted to embezzling (in fact the figure was closer to £6000). Juniper and coriander work with 12 other botanicals, including dried fruits (orange, mango, pineapple and kiwi fruit) and Tasmanian native pepper berry. They are soaked in a cane sugar base spirit in a muslin cloth in the spirit still for one day, followed by a one-day distillation process.

This is a contemporary style Old Tom Gin, laden with sweet fruits and botanicals making irresistibly tropical and summery. The aroma presents immediately with dried mango, mint and a slightly saline/metallic note. Juniper is secondary, and delivers a petrichor scent, fitting with the equatorial feel. The palate is full of tropical fruits, the kiwi very evident. Despite it's lightness of weight, it has a round and silky mouthfeel with a slight sweetness. It tapers with hay notes, fairy floss and minerals. The ultimate ingredient in a Gin and juice.
