Grapes are harvested manually and pressed in 3 different locations, close to the vineyards. Pere Ventura implements a green harvest and carefully selects the grapes and bunches he wants for the bottle. Like Champagne, the wines are made by the traditional method, where the second fermentation is done in the bottle. This cava is always produced as a Brut, with dosage of 8 g/l of sugar and wine 15 months in bottle before disgorgement.
