The Amontillado is one of the most complex wines of the D.O. Montilla-Moriles, a kind of mixture of Fino and Oloroso. First it matures like a fino under the protection of the flor yeasts, then it is exposed to the air like an oloroso. Magnificent hues of amber, the nose is intense, fragrant, with complex aromas of roasted hazelnuts, spicy notes such as cinnamon and cloves. On the palate recalling nutty flavour and a slight saline minerality.
