It was crushed, pressed and then fermented cool, with about 30% of juice fermented in 3y/o French oak barriques and extended time on lees until bottling, increasing the wine’s complexity and texture; delicious aromas of ripe pears, cumquat zest and spice are the signature notes of this wine and the round flavours will develop richness and texture as it matures in bottle.
