100% Pecorino from massal selection coming from the original five mother vines rediscovered in the estate in 1999. Grown on limestone with a marly-gravel subsoil. Only free-run juice is used. Fermentation in stainless steel with no malolactic fermentation. Bottled unfined and unfiltered.
