I love this grape variety as it embodies everything I look for in a red wine. Red to purple fruits, a gamey, savoury edge, firm structural tannin but can embrace a feeling of real charm. The winemaking is the same as our Tonic Grenache: hand-picked, some whole bunch employed in fermentation for perfume and that savoury something. Post ferment our benign neglect kicks in, topped regularly in old barriques and puncheons but otherwise untouched. Racked and sulphured just before bottling.
