The varieties of olives used to create this fine oil are Moraiolo, Leccino and Frantoio, a combination that gives balance and personality to the product. The harvest, strictly manual, generally begins in the first days of November. Immediately after, the olives are processed through a mechanical process that involves cold pressing, followed by centrifugation and filtration to preserve the quality of the oil.
