Harvested by hand and processed in modern presses that replicate the action of traditional basket presses. After pressing, the musts are left to ferment spontaneously in oak casks in the presence of natural yeasts

Nose: Savoury herbal aromas followed by apple peel, lemon balm, and sweet apricot

Palate: A well-defined structure is steered by vivid acidity, followed by good concentration in the mid-palate, juicy and with a touch of minerality
