Babyberg is where Sandra de Pury gets to play. It’s a new project for Yeringberg’s younger vines, with a bit more freedom in the winemaking and a fresh take on what the estate can be. This white blend flips the classic Marsanne/Roussanne combo on its head, bringing texture, grip and a more savoury vibe into the mix.

The Marsanne makes up the bulk of it and spent about three weeks on skins, adding structure and a bit of chew. The Roussanne was pressed straight to old barrels to keep its perfume and balance things out. It all came together in old oak for 10 months, and was bottled as is – no fining, no filtration.

It’s got a soft golden glow and opens with gentle florals, dried herbs, stone fruit and spice. The palate is layered and textural but still really fresh – more food wine than poolside sipper, and all the better for it
