‘Cavallina' is a 2 hectare hillside cru facing east, renowned for its white marl (limestone mix) soils. Mango flesh, chamomile and lemon sherbet characters are carried by racy acidity. One of the greats. As with the others, the wine making is identical – showing the effect of aspect and soils.

Soft press, spontaneous ferment, 12 months on fine lees in stainless steel + 12 months in bottle before release. No malo.
