Vineyards: Sourced from established vineyards in cool climate, high-altitude Tumbarumba, NSW.
Winemaking: Wild Fermented in 800L Amphora clay pots on full solids with no additions. Matured on solids in Amphora for 6months prior to bottling. Made using natural philosophies and with no additions. Vegan friendly, unfined and unfiltered.
Tasting Note: Fresh and pure with green mango and white peach fruit overlaid by notes of sea salt, riverstone and aniseed. The maturation in Clay Amphora is evident in the excellent chalky texture and the complex but fruit driven palate. Flavours of lime, nectarine and pink grapefruit are given tension and profile by a fine mineral acid backbone
