Domaine Thierry Mothe Chablis Aoc 2023
The Domaine Thierry MOTHE has been a family-owned property since 1887, passed down through several generations. In 1957, Guy Mothe began vinifying the vineyards in Chablis, and today, his three sons, Jean-Louis, Thierry, and Vincent, manage the 55 hectares of vines. Exclusively planted with Chardonnay, the vineyards produce fresh, fragrant, and lively wines, representing all four of Chablis’ Appellations, crafted with a blend of traditional Burgundian methods and modern techniques.
The harvest is carefully timed and executed to ensure pristine fruit, which is then gently pressed off the skins at the winery. Fermentation occurs in steel tanks over 15 days, with temperature control between 15-18°C. The wine is then matured partially in steel tanks and the remainder in older French oak before blending and bottling.
