Tasting Notes

Lifted nose showing white peach lemon and brioche aromas. The palate is fruity with fresh lemon flavours and a minerality. The finish is long and crisp due to a high in natural acid. It is a "Chablis" style Chardonnay.

Winemaking Notes

De-stemmed and lightly crushed the grapes are pressed into a selection of 5 year old French oak barriques and puncheons. The alcoholic fermentation was carried out with a selected yeast followed by a partial malolactic fermentation. This wine was then aged for 6 months in barrels on full lees. It was then fined cold stabilised and sterile filtered before bottling in November 2023.
