The sparkling wine base rests in steel until the spring following the harvest. After tirage, it rests on its lees for at least 36 months before disgorging.
Typical onion skin color. Fine and persistent perlage. Intense aroma with notes of yeast, plum, and walnut. Dry and fragrant on the palate, with good structure and a persistent freshness.
Excellent drinkability. It pairs well with fish and shellfish appetizers, white meats, and traditional dishes like pizzocheri. Best served at 10°C.
