Brunello from San Polo has a lengthy ageing potential and can further improve with extended bottle ageing. This is due both to the characteristics of the soils on which the grapes are grown—the calcareous content provides ideal conditions for Sangiovese—and the position of the vineyards on the beautiful hills at San Polo.
The bouquet exhibits typical aromas of violets and small red berries. Subtle nuances of forest undergrowth, aromatic wood, a touch of vanilla, and jammy mixed fruit then give way to delicate hints of coffee.
In the glass, the wine shows an intense ruby red colour with garnet hues, clear and glossy in appearance. On the palate, this Brunello is intense, persistent, broad, and heady. It is full-bodied and warm, with a densely woven texture and a robust structure. The finish is long and persistent, supported by well-rounded tannins.
The elegance and harmonious personality of this wine enable it to pair extremely well with highly structured cuisine such as red meats and game, as well as mushrooms and truffles. It is also ideal with matured cheeses like Parmigiano Reggiano and Tuscan pecorino.
Serve at 18–20 °C. With proper cellaring, it offers a longevity of 15 to 25 years. Decant for at least 1 hour before serving.
