Selected from our organically certified Pinot Noir and Gamay blocks from Annangrove Park AP13 at 700m, and Balmoral at 900m, the Pinot Noir was hand-picked on the 8th of March 2022 from 6.30am, and the Gamay on the 6th of April 2022. Placed into half-tonne slotted bins, taken directly to the winery.
These whole bunches were placed into open fermenters and wild fermentation started while the grapes were fully intact. After 15 days the carbonic maceration was finished and the fruit was gently pressed into stainless steel tanks with lees stirred for 4 months to increase the mouthfeel. The wine was passed through a rock filter
prior to bottling.
